VERJUS, The essence of great kitchens.
Verjus is the rare juice of unripe grapes, gentler than vinegar, finer than lemon.
The green berries are harvested by hand, the yield is tiny. For SONNEN Verjus, we use Pinot Noir and Syrah from Gléresse as well as Fendant from Salquenen.

This singular acidity is our starting point. Sometimes we compose complex drinks with blossoms, herbs and organic juices. A non alcoholic wine alternative that works as a food pairing drink or proxy drink. Sometimes we let the verjus speak almost on its own. Always handcrafted in Bern, always free of artificial flavours.
