Verjus.
The juice of
young grapes.
Verjus is the rare juice of unripe grapes, milder than vinegar, finer than lemon. The unripe berries are harvested by hand and the yield is tiny. For SONNEN Verjus we use Pinot Noir and Syrah from Ligerz and Fendant from Salgesch.
That particular acidity is our starting point. Sometimes we compose drinks from it with blossoms, herbs and organic juices. Sometimes we let the verjus speak almost for itself. Always handmade in Bern, always without artificial flavours.
